For the Shortbread:

  • 1/4 cup all-purpose flour
  • 3 tablespoons icing sugar
  • 1 teaspoon grated lemon zest
  • pinch of salt
  • 2 tablespoons, unsalted butter

For the lemon curd:

  • 2 egg yolks
  • 1/3 cup sugar
  • 1 teaspoon grated lemon zest
  • 3 tablespoons lemon juice
  • 2 tablespoons butter, COLD and cut into small pieces

To Make the Shortbread:

  1. Sift together flour, icing sugar, lemon zest and salt.
  2. Rub in butter until a crumbly dough forms
  3. Crumble dough onto parchment paper lined baking sheet and bake in 350 degree oven until golden brown; about 10 minutes.  Remove from oven an allow to cool.

In the meantime, get started on the Lemon Curd:

  1. Beat egg yolks, sugar, and lemon zest in a heavy saucepan (off the heat) until well blended.
  2. Add lemon juice and cook over low heat stirring constantly for about 8 - 10 minutes.  Cook until the mixture coats the back of a spoon.
  3. Remove from heat and stir in butter pieces, until melted.
  4. Strain through a fine mesh sieve to remove lemon zest and any scrambled egg pieces.  Allow to cool.

Assembling your Sundae:

  1. Place a couple scoops of Earl Grey & Honey Ice Cream into your bowl.
  2. Top with the lemon curd
  3. Sprinkle the shortbread crumble on top.
