Try This At Home: Rice Crispy Sammies

Happy National Chocolate Ice Cream Day! In honour of this great day, we just have to share one of our favourite #trythisathome recipes we've ever made with chocolate ice cream: Gluten-free and VEGAN Rice Crispy Sammies!

 

Serves: 9

 

What you need:

  • 50 g coconut oil
  • 380 g Dandies vegan marshmallows
  • 1 tsp salt
  • 2 tsp pure vanilla extract
  • 200 g Nature’s Path Crispy Rice Cereal (beware of using Kellogg's Rice Krispies since they aren't strong enough to hold the thickness of vegan marshmallows)
  • Scoops of our chocolate ice creams (right now we have Chocolate Milk, Chocolate Tortoise, and Vegan Chocolate Jasmine Sorbet)

 

What to do:

  1. Melt coconut oil in larger saucepan over medium heat
  2. Add marshmallows and melt, stirring constantly to avoid burning - You will quickly find that vegan marshmallows like Dandies melt a little differently than traditional marshmallows. Don’t let this worry you. The melted marshmallows tend to be thicker than their traditional counterparts.
  3. Once marshmallows are completely melted, turn off heat and add salt and vanilla extract. 
  4. Stir in Rice Crispy Cereal. Make sure to coat all of it and disperse the marshmallow evenly throughout the mixture.
  5. Transfer the mixture to two 9x12 greased (with coconut oil) baking pans. The treats will be thin, approximately ½ inch thick - It’s best to make thinner treats, rather than cutting them in half (sandwich style) to make the ice cream sandwich. Again, having a good amount of air in the treat is key. If you cut the rice crispy square in half to make the sandwich rather than working with 2 thinner pieces, you will squish the square and break some of the cereal with the knife. Not to mention these vegan squares are harder to cut than their traditional counterparts! So save your cutting muscles and simply make thinner squares, doubling them up for each half of the sandwich.
  6. Let cool.
  7. Cut each pan into 12 pieces, yielding 24 pieces in total. 
  8. Slightly squish 1 scoop of Four All Ice Cream between 2 squares.
  9. Eat immediately!
