Try This At Home: Gluten-Free Vanilla Cupcakes

 

Even though today marks the end of our birthday month, it's never too late for cake.

 

What you need:

  • 1 jar of our Birthday Cake Ice Cream
  • 1/2 tsp vanilla extract  
  • 3 tbsp melted butter 
  • 2 eggs 
  • 2 eggs yolks 
  • 1/4 brown sugar 
  • 1/4 white sugar 
  • 1/4 tsp Salt 
  • 3/4 cup gluten-free flour
  • Naturally coloured sprinkles

 

What to do:

  1. Pre-heat oven to 350 Degrees 
  2. Combine vanilla and melted butter and set aside 
  3. Whisk together eggs, egg yolks, sugars and salt 
  4. Fold in flour 
  5. Fold in butter vanilla mixture 
  6. Fill a cupcake tray with each cup half full
  7. Bake for 15-18 minutes and allow to cool
  8. Add 1 scoop of our Birthday Cake Ice Cream on top of each cupcake and freeze for 30 minutes.
