Tasty Tip: Ice Cream Smores

Turn this classic treat on its head by using chocolate ice cream and homemade marshmallow fluff instead!

 

Here's what you need:

  • Graham Crackers
  • Scoops of our Chocolate Orange Cranberry vegan ice cream
For the Marshmallow Fluff: 
  • 1/3 cup of water
  • 3/4 cup of cane sugar
  • 3 egg whites 
  • 3/4 cup of honey
  • 1/2 tsp of cream of tartar
  • 1 tsp vanilla extract

 

What to do:

  1. Make your marshmallow fluff:
  2. Add egg whites and cream of tartar in a stand-mixer bowl
  3. Put the water, sugar, and honey in a medium saucepan and place over low heat to combine and dissolve the sugar (don't let simmer until the sugar has completely dissolved)
  4. Use a candy thermometer to simmer the mix until it reaches 120 degrees Celcius, then remove from heat once it has reached temperature
  5. Turn the stand-mixer on to medium speed to whip the egg whites to soft peaks (for approx. 3-4 minutes)
  6. Lower the mixer speed and slowly, carefully pour the sugar syrup into the egg whites in a thin steady stream
  7. Once the syrup is completely added, turn the mixer to high and continue whipping until the whites thicken and fluff up
  8. Continue to whip for 6-8 minutes or until the mixture is thick and glossy
  9. Add the vanilla and whip until the fluff is cooled
  10. Assemble your smores by added the small scoop of ice cream first to your graham cracker then top with marshmallow fluff
  11. Assemble your smores with graham crackers and the ice cream!
